This is a perfect hot meal for the carb lover who is looking for a delicious alternative to the traditional Burrito Bowl. If you are a vegetarian living in a household that eats chicken, pork or beef, my recipe is sure to please everyone at the dining room table. Simply add any meat that has not been marinated in a sweet sauce to keep it as a low carb meal.
Ingredients:
27 Ounces – about 5 stalks of green onions
3 Cups of chopped fresh red cabbage
4 Cups riced cauliflower
1 Cup black beans cooked
1 Large clove of garlic, fresh
1 Tablespoon of chili spice
3 Fresh limes
1 Dash Salt
1 Spring fresh coriander
1 Fresh small Avocado
1 Tablespoons of coconut oil
Instructions:
1- Chop garlic, green onions and red cabbage
2- Put 2 tablespoons of coconut oil in a large frying pan
3- Add and sauté garlic, green onions and cabbage
4- Add and sauté 4 cups of riced cauliflower
5- Add 2 tablespoons of Chili powder
6- Squeeze fresh lime juice and stir in frying pan
7- Serve 1 cup of stir fry in a bowl
8- Add and chop 1/4 of Avocado and sprig of coriander
